Fresh tomato season comes and goes faster than I can blink… and I can’t seem to eat enough tomatoes to satisfy my craving. My only definite plant that’s going into my future garden is the glorious tomato. And probably in multiple varieties.
Oh, and also for sure going in is basil. If I could find a basil candle sent that filled my entire house I would be a happy woman. Basil is my scent.
Because tomatoes seem to be in peak season here, I’ve been making everything into a version of caprese salad that I can possibly think of… burgers, bruschetta, grilled cheese, pizza (maybe this is called margherita.. whatever), you get the point.
The fastest, easiest, and most crowd pleaser appetizer that I bring places are the simple caprese salad skewer. If you haven’t made some version of this snack on a stick… you need to. I’m sure you’ve seen it a million times on Pinterest but no matter how many times people have seen it, it’s still the first thing to disappear off of the table. Elegant football snacks, here we come…
Caprese Salad Skewers
Makes 20-30 skewers.
1 package of ciliegine size mozzarella cheese
1 package of grape tomatoes
1 bunch of fresh basil (larger pieces torn into manageable pieces)
Slice each ball of mozzarellla cheese in half (you can use any size of mozzarella cheese, just cut into small, bite sized pieces). Thread a grape tomato, basil, and half a ball of cheese onto toothpick. Once you have all skewers assembled, drizzle high quality balsamic vinegar and serve.
These can be made a couple of hours ahead of time but I would wait immediately until serving to drizzle the balsamic vinegar.
