Sweet Potato Burritos

Let me preface this whole recipe by saying I’m not the hugest fan of sandwiches.  As in, my husband gets really excited when a loaf of bread shows up on the kitchen counter. They’re just not my jam. I love to eat hot food for my main dish for both lunch and dinner.  Call me crazy.  It’s what I like. Back in the day (when I had my life together) I tried to follow somewhat of a meal schedule that had at least one vegetarian meal per week. Also one taco meal per week.  But that’s just me. Back in this same day I was able to buy groceries for Cale and myself (3 meals a day/ 7 days a week) for less than $50.  This was only 2 years ago so you can tell how much I’m failing on all life accounts. I was always looking for meals that were cheap but didn’t taste cheap and were great re-heated and even better if you could freeze them. Enter sweet potato burritos.  There’s absolutely no meat in them and you can even make them vegan…

Currently Obsessing

Heyo!  I know that summer technically lasts for another month, in my books I have one week of summer left.  One week before Labor Day, one week before the pool closes… Speaking of Labor Day, what happened to schools waiting until after labor day to start?  Not that it particularly affects me anymore but seeing the busses on the road really speeds up my fall odometer. In honor of the very last week of summer (I’ll definitely say that again before it’s over) here are some of my current summer faves! Favorite Spot: We finally are getting in my favorite produce at the Farmer’s Market!  Tomatoes, sweet corn, bell peppers… I could just sit there and breath in the scent of fresh produce and be a happy camper for most of the day! Favorite Food:  Speaking of Farmer’s Markets and fresh produce.. Hello sweet corn season!  I always thought that after moving away from the Midwest that I would never experience ‘good’ sweet corn again.  Honestly.  I think they taught me that in school.  Ok kidding..   Turns out the western slopes of Colorado can grow themselves some dang…

The Dirt Pile

Happy Thursday!  So if today is Thursday, tomorrow is Friday and then we’re on to another weekend! We are up to another weekend of playing in the dirt so if there are any ultimate DIYers out there you are welcome to join us. Jenny’s carefree apartment life is looking more enticing by the minute. By Monday morning, the sprinkle system needs to be in and preferably functional, along with 4 inches of top soil (because what we’re ‘digging’ through now is a pretty sorry excuse for anything but concrete). Then, my friends, grass seed gets put in. And then.. bring on the yard games and backyard barbecues. Or let’s be honest, then are different house projects. Next, we may need sanity counseling. Is this a thing.. if not it should be. Turns out, when 2 people take on a lifetime of house projects.. but they don’t exactly like house projects nor do they know what they’re doing- Life gets… interesting. Do not ask me why we decided that the brand new house needed any work at all… BUT, if we ever decide to build…

Eleven Mile State Park

Nitty Gritty: This state park is just west of Colorado Springs near Lake George, Colorado- a short 2 hour drive from Denver.  Tent camping (non-electrical) is $16 a night and the park pass is $7 a day.  The address for Eleven Mile State Park is: 4229 County Road 92, Lake George, CO 80827 Cale and I were looking to get out of town for our anniversary weekend but didn’t want to spend a ton of money.  We love going camping but have seen entire summers disappear without a camping trip in sight.  We decided to kill two birds with one stone.  We were both able to relax, catch up on life around the campfire, and stare at the gorgeous sunrise.  Seriously, it was amazing.  We of course loaded up on all our favorite treats and snacks, and pulled out some new camping gear when it came to dinner time.  The result?  Two smelly, relaxed, and stuffed campers.
